Closet Vegetarian: Part II

A big part of deciding your diet is picking out the right foods for eating at home.  We decided to go for it and buy all vegetarian this time, which I’m very excited about! We bought anything that seemed remotely healthy and appetizing that was also vegetarian (as far as we could tell).  We went crazy!  Here is what we are trying out for the next two weeks, separated slightly into similar categories:

We had tortellini, roasted organic potatoes, and frozen veggies last night and fake chicken nuggets, a vegetable roll, and brown rice tonight.  Both meals were fantastic!
